It is produced by various Fusarium spp. It is slightly soluble in water but highly soluble in polar solvents such as methanol, ethyl acetate and acetonitrile and is stable in organic solvents specially ethyl acetate and acetonitrile therefore making them highly suitable for storage. 15-Acetyldeoxynivalenol (15-AcDON) is a low molecular weight sesquiterpenoid trichothecene mycotoxin that basically means it is a monoacetyl analogue of DON.
